Broccoli and egg bhurji
Four eggs scrambled through broccoli, onion and green chilli. It has about 28 g protein and 9 g net carbohydrate, and takes one pan and roughly ten minutes.

Why Priyanka makes this
Some nights I genuinely don’t have the energy to plan a meal, and this is what happens on those nights, whatever vegetable is sitting in the fridge chopped small and thrown in with eggs. I added broccoli almost by accident because it was what I had left over from another recipe, and it turned out to work better than I expected, it doesn’t fall apart the way spinach does when it’s scrambled through. Four eggs feels like a lot until it’s actually on the plate, and I’ve noticed I stop thinking about food for hours afterward, which isn’t something toast has ever managed for me.
What you need
Serves 1:
- 4 eggs
- 1 cup broccoli, chopped small
- ½ onion, sliced
- 1 to 2 green chillies, chopped
- 2 tbsp oil or ghee
- Turmeric, red chilli powder and salt, to taste
- Coriander leaves, for garnish
How to make it
Heat the oil and sauté the onion until soft. Add the broccoli and cook until just tender.
Push everything to one side, crack in the eggs and scramble them through the vegetables. Season with turmeric, chilli powder and salt, then finish with green chilli and coriander.

These figures are calculated from the quantities above. Energy and fat move with the oil: at 1 tbsp rather than 2, the plate comes to roughly 460 kcal and 33 g fat.

Make this when planning a meal feels like too much and the alternative is toast. Four eggs deliver enough protein to hold most people for hours, which is what stops the mid-morning search for a snack.
At 47 g of fat this is a substantial plate. Treat it as the meal, and cut the oil to 1 tbsp if you are watching total energy.
