Why Priyanka makes this

I used to steam everything because that’s what I thought “eating clean” meant, and I remember genuinely dreading vegetables for a stretch of a few weeks. The night I finally just threw them in ghee instead of steaming, out of pure impatience more than any plan, it tasted like an actual meal for the first time in a while. Adding paneer and a slice of cheese on top wasn’t strategic either, I just had it in the fridge. It ended up being the plate I go back to on nights I don’t feel like thinking, twenty four grams of protein without any real effort, and it keeps me full in a way plain steamed vegetables never did.

What you need

Serves 1:

  • 1 cup mixed onion, capsicum, tomato and mushrooms, roughly chopped
  • 100 g paneer, cubed
  • 2 tbsp ghee
  • 1 processed cheese slice
  • Salt, oregano and chilli flakes to taste

How to make it

Heat the ghee in a pan. Sauté the vegetables and paneer together until softened and lightly golden, then season with salt and oregano.

Transfer to an oven safe dish, top with the cheese slice and grill or bake briefly until melted. Finish with a dusting of chilli flakes.
